Chickpea Tacos with Wild Ranch Dip

Chickpea Tacos with Wild Ranch Dip

Ingredients:

Tacos

  • 2 Red Peppers
  • 1 tsp Extra Virgin Olive Oil
  • 1 clove Garlic minced
  • ¼ Red Onion minced
  • 1 14oz can Chickpeas rinsed
  • 8 Corn Tortillas
  • 2 Limes
  • 2 Avocados
  • ½ cup Pickled Onions
  • Cilantro to taste
  • Michelle's RawFoodz Wild Ranch Dip to taste

Taco Seasoning

  • ½ tbsp Chilli Powder
  • ½ tsp Smoked Paprika
  • ½ tsp Cumin
  • ¼ tsp Oregano
  • Salt & Pepper to taste

Instructions:

  1. In a pan, sauté garlic and onions in olive oil until soft.

  2. In a separate bowl, combine taco seasoning ingredients and toss chickpeas in.

  3. Add seasoned chickpeas to the hot pan and cook until warm.

  4. Serve warm chickpea mix on corn tortilla and garnish with lime, pickled onions, cilantro, avocado and Michelle's RawFoodz Wild Ranch Dip.
